Okra Recipe


Medium sized okra

Okra is a popular recipe in Egypt. In Romania we call them bame, but we don't use it as much as I do here in Egypt. There are many recipes for okra, but i love it with garlic. Olive oil also gives it a special taste and it make it a healthy food.
 
Ingredients

-1kg okra (preferably fresh, but it's good also the frozen one, small okra)
-2 medium onions
-2 tablespoons olive oil
-3 medium chopped fresh tomato
-5-6 cloves garlic, crushed
-1 teaspoon fresh lemon juice
-2 teaspoons chopped fresh parsley
-2 teaspoons coriander
-1/2 teaspoon ground cardamom
-salt, black pepper
I.Heat oil in a medium saucepan on a medium fire and fry onion until golden. 

II.And the garlic and keep on the fire 2 more minutes. 

III.Add all the other ingredients except from okra and reduce the fire for about 5 minutes. Then add okra and pour water to cover it. 

IV.Cover the pan and let it boil. From time to time stir it and if needed add water until the okra is very well done. Sometimes, it needs more time to be boiled.

We serve it hot with white rice or rice with vermicelli.

cooked bamya

 Ingrediente:

-1kg bame (de preferat proaspete, dar si cele congelate sunt la fel de bune; sa fie mici, ca fierb mai bine si mai repede decat cele mari)
--2 cepe medii
-2 linguri ulei de masline
-3 rosii medii tocate
-5-6 graunti usturoi, pisati
-1 lingurita zeama de lamaie
-2 lingurite patrunjel tocat
-2 lingurite coriandru
-1/2 lingurita nucsoara
-sare, piper

I.Intr-o tigaie calim ceapa, apoi adaugam usturoiul si mai tinem pe foc inca 2 minute. Adaugam toate celelalte ingredient in afara de bame si reduem focul. Tinem pe foc mic inca 5 minute. 

II.Apoi adaugati bamele si apa cat sa acopere bamele. Acoperiti cratita si lasati sa fiarba. Din cand in cand mai mestecati si mai adaugati apa daca este nevoie. Uneori, bamele au nevoie de mai mult timp sa fiarba.

Servim mancarea calda alaturi de orez alb sau orez cu fideluta.
