Kabsa with chicken (orez kabsa cu carne de pui)

                                                      Chicken Kabsa
 
Kabsa is a traditional dish from Golf. In order to change our usual menu, we can just try it from time to time :)

Ingredients: 

-2 1/4 cups basmati rice
-4 cups hot water
-1 tablespoon butter or 2 tablespoons oil (butter gives a better taste)                                                 
-2 medium onions, chopped
-5-6 cloves garlic, crushed
-2 tablespoons tomato paste
-1 carrot
-1 chicken – we cut it into pieces
-spices – as we prefer: cinnamon, black/white pepper, lemon peel, coriander, curry, nutmeg, cumin, maybe hot pepper
-salt

I.We wash the rice and we leave it in water till we prepare the other ingredients

II.Melt the butter and add the chicken with onion and garlic. We stir till the onion becomes golden, then add the tomato puree and simmer over a low heat for a couple of minutes.

III.Add the chopped tomatoes, the grated carrot and all the other spices, salt and stir 2-3 more minutes. Then pour the water.
  
IV. Bring to a boil and then reduce heat and cover. Simmer over low heat for 30 minutes.

V. Add rice in the pot and stir carefully. (if you want to have brown chicken, remove it from the pot now and place in the preheated oven). Cover and simmer for 35 - 40 minutes.

We serve it on big serving dish, we put the chicken on the top and we garnish it with fresh vegetables salad, salad of cabbage with carrots.

Instead of chicken, we can use whatever kind of meat we like. 

                                             Orez Kabsa cu pui la cuptor
Ingrediente:

-2 1/4 cani orez cu bob lung, basmati
-4 cani de apa fiarta
-o lingura de unt ori 2 linguri de ulei (untul ii da gust mai bun)
-2 cepe medii
-5-6 graunti de usturoi
-2 linguri de bulion
-1 morcov
-1 pui – il taiem in bucati
-condimente – ce vrem noi: scortisoara, piper, coaja de lamaie, coriandru, curry, poate si ardei iute, nucsoara, chimion
-sare

I. Spalam orezul si il lasam in apa pana pregatim celelalte ingrediente

II.Incingem untul si adaugam bucatile de pui cu ceapa si usturoiul. Amestecam pana se caleste ceapa apoi adaugam cele 2 linguri de bulion si mai tinem pe foc mic alte cateva minute.

III. Adaugati rosiile, morcovul dat pe razatoare si toate celelalte condimente, sare si amestecati 2-3 minute. Apoi adaugati apa.

IV. Aduceti la puntul de fierbere, apoi reduceti focul si acoperiti cratita. Lasati sa fiarba aproximativ 30 de minute.

V.Adaugati orezul si amestecati cu grija (daca vreti, acum puteti sa scoate bucatile de carne si le puneti la cuptor). Acoperiti si lasati sa fiarba la foc mic 35-40 de minute.
  
Se serveste pe un platou mare, deasupra se pun bucatile de pui. Ca si garniture, putem servi salata de cruditati, salata de varza cu morcovi.

In loc de carne de pui, se poate pune orice fel de carne, dupa preferinta.
